Ingredients
  

  • 2 slices sourdough or artisan bread
  • ½ ripe avocado mashed
  • ½ cup cooked shredded chicken grilled or rotisserie
  • 2 slices cheddar or Monterey Jack cheese
  • 1 tbsp mayonnaise or aioli optional
  • 1 tsp lemon juice
  • 1 tbsp butter for toasting
  • salt and pepper to taste
  • optional add-ins tomatoes, red onion, crispy bacon

Instructions
 

  • Mash avocado in a small bowl with lemon juice, salt, and pepper until creamy.
  • Spread mayonnaise on one side of each bread slice. Spread avocado mixture on the other side of one slice.
  • Layer shredded chicken and cheese on top of the avocado spread. Place the second bread slice on top, mayo side out.
  • Melt butter in a skillet over medium heat and place the sandwich in.
  • Grill for 3–4 minutes per side, pressing with a spatula, until golden brown and cheese is melted.
  • Remove from skillet, let rest briefly, then slice in half and serve warm.

Notes

For extra flavor, add crispy bacon, sliced tomato, or red onion. Serve with soup or salad for a complete meal.
