Delicious Frozen Rhubarb Yogurt Bites

Ingredients
  

Main Ingredients

  • 2 cups Greek Yogurt (or Dairy-free Yogurt for vegan option) Use dairy-free yogurt for a vegan version.
  • ¼ cup Honey (or Maple Syrup for vegan option) Maple syrup can replace honey for a vegan option.
  • 1 teaspoon Vanilla Extract
  • 2 cups Rhubarb (fresh or frozen) If using frozen, allow it to thaw slightly.
  • ½ cup Sugar Adjust to taste.

Instructions
 

Preparation

  • Gather all the ingredients listed above.
  • If using fresh rhubarb, wash and chop it into small pieces. If using frozen rhubarb, thaw slightly.

Cooking the Base

  • In a medium saucepan over medium heat, combine the chopped rhubarb and sugar. Cook for about 5-8 minutes until the rhubarb starts to soften.

Cooling

  • Remove the saucepan from heat and let the mixture cool completely.

Mixing

  • In a large mixing bowl, combine the cooled rhubarb mixture with the Greek yogurt, honey (or maple syrup), and vanilla extract. Mix well.
  • Taste the mixture and adjust sweetness if needed.

Filling Molds

  • Fill silicone molds or ice cube trays with the yogurt mixture, leaving space at the top for expansion.

Freezing

  • Freeze for at least 4-6 hours, preferably overnight.

Serving

  • Once frozen, gently flex silicone molds to release yogurt bites or run hard plastic molds under warm water.
  • Serve immediately or store in an airtight container in the freezer.

Notes

Store in an airtight container; use parchment paper to prevent sticking if stacking. Can last up to three months in the freezer.
