Ingredients
  

  • 4 boneless skinless chicken breasts
  • ½ cup hot honey
  • 4 cloves garlic minced
  • 2 tbsp olive oil
  • salt and pepper to taste
  • 2 cups cooked rice or quinoa
  • 2 cups mixed vegetables bell peppers, broccoli, snap peas
  • ¼ cup low-sodium soy sauce
  • 2 tbsp fresh lime juice

Instructions
 

  • Prep ingredients: mince garlic, chop vegetables, and cook rice or quinoa.
  • Pat chicken dry and season with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat. Sear chicken 5–6 minutes per side until golden and cooked through (165°F/75°C).
  • Mix hot honey, soy sauce, and lime juice in a bowl to make the sauce.
  • Add minced garlic to skillet, sauté 30 seconds until fragrant.
  • Pour sauce over chicken, simmer 1–2 minutes until coated in glaze.
  • Add vegetables to skillet in last 2–3 minutes, stir until tender-crisp.
  • Assemble bowls: layer rice or quinoa, top with chicken and vegetables.
  • Drizzle extra sauce over bowls, serve with lime wedges if desired.

Notes

Swap chicken with tofu for vegetarian option. Use tamari for gluten-free. Add sesame seeds or cilantro for garnish.
