  • 2 large eggs Can use flaxseed meal mixed with water as a vegan alternative.
  • ½ cup breadcrumbs Use gluten-free breadcrumbs if needed.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Casserole Assembly

  • 2 cups shredded cheddar cheese Dairy-free cheese can be used as a substitute.
  • ½ cup milk Non-dairy milk works as a substitute.
  • ¼ cup butter Use plant-based butter for a dairy-free option.
  • 4 cups mashed potatoes Can be homemade or store-bought.
  • ¼ cup ketchup

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the ground beef with breadcrumbs, eggs, diced onion, minced garlic, salt, and pepper. Mix until well combined.
  • Gently press the meat mixture into the bottom of a prepared baking dish.

Baking the Meatloaf

  • Place the baking dish in the preheated oven and roast for about 25-30 minutes until golden-brown and fully cooked.
  • While the meatloaf is baking, prepare the mashed potatoes.

Assembling the Casserole

  • Spread the creamy mashed potatoes evenly over the cooked meatloaf.
  • Sprinkle shredded cheddar cheese generously over the mashed potatoes.
  • Return the casserole to the oven and bake for another 10-15 minutes until the cheese is melted and bubbly.
  • Let it cool for about 5-7 minutes before slicing and serving.

Notes

For additional flavor, add herbs like thyme or experiment with spices like cumin. Avoid overmixing the meat to prevent toughness.
