Instructions
Preheat oven to 400°F (200°C). Toss diced potatoes with olive oil, salt, and pepper. Spread on a baking sheet.
Roast potatoes for 25-30 minutes, stirring halfway, until golden and crispy.
Meanwhile, cook ground beef or turkey in a skillet over medium heat until browned, 5-7 minutes. Drain excess fat.
Add taco seasoning and 2-3 tbsp water to the meat. Stir and simmer 5 minutes.
Prepare toppings: rinse beans, heat corn, dice avocado, and chop cilantro.
Assemble bowls: start with roasted potatoes, then add meat, beans, corn, cheese, avocado, sour cream, and cilantro.
Serve warm and enjoy!
Notes
Swap beef for turkey, chicken, or extra beans for a vegetarian version. Try sweet potatoes for a flavorful twist.
