Ingredients
  

  • 2 large potatoes diced
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 avocado diced
  • sour cream for serving
  • chopped cilantro for garnish
  • olive oil for roasting potatoes
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 400°F (200°C). Toss diced potatoes with olive oil, salt, and pepper. Spread on a baking sheet.
  • Roast potatoes for 25-30 minutes, stirring halfway, until golden and crispy.
  • Meanwhile, cook ground beef or turkey in a skillet over medium heat until browned, 5-7 minutes. Drain excess fat.
  • Add taco seasoning and 2-3 tbsp water to the meat. Stir and simmer 5 minutes.
  • Prepare toppings: rinse beans, heat corn, dice avocado, and chop cilantro.
  • Assemble bowls: start with roasted potatoes, then add meat, beans, corn, cheese, avocado, sour cream, and cilantro.
  • Serve warm and enjoy!

Notes

Swap beef for turkey, chicken, or extra beans for a vegetarian version. Try sweet potatoes for a flavorful twist.
