Ingredients
  

  • 1 cup all-purpose flour
  • ½ cup unsalted butter melted
  • ¼ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup oats
  • 1 ½ cups ripe mango diced
  • 2 tbsp lemon juice fresh
  • 1 tbsp cornstarch
  • ¼ tsp salt

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish with butter or spray.
  • In a bowl, combine flour, granulated sugar, brown sugar, oats, and salt. Mix well.
  • Stir in melted butter until mixture becomes crumbly.
  • Press two-thirds of the mixture into the prepared pan to form the crust.
  • In another bowl, mix diced mango, lemon juice, cornstarch, and a pinch of salt.
  • Spread the mango filling evenly over the crust layer.
  • Crumble the remaining mixture over the mango filling.
  • Bake for 30–35 minutes until golden brown on top.
  • Allow to cool completely before cutting into bars.

Notes

Use ripe mangoes for the best flavor. You can substitute gluten-free flour or dairy-free butter. Store leftovers in an airtight container in the fridge for up to 5 days or freeze for later.
