Ingredients
  

  • 4 pieces salmon fillets about 6 oz each, fresh or thawed
  • 1 cup pineapple chunks fresh or canned
  • ¼ cup honey
  • ¼ cup soy sauce or tamari for gluten-free option
  • 2 cloves garlic minced
  • black pepper to taste
  • 1 tbsp olive oil for drizzling
  • green onions chopped, for garnish

Instructions
 

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together honey, soy sauce, minced garlic, and black pepper until well blended.
  • Place salmon fillets on the prepared baking sheet.
  • Pour the honey-soy mixture evenly over the fillets, ensuring they are fully coated.
  • Top each salmon fillet with pineapple chunks and drizzle lightly with olive oil.
  • Bake for 15–20 minutes, or until the salmon flakes easily with a fork and the pineapple begins to caramelize.
  • Remove from the oven and let rest for a minute before serving.
  • Garnish with chopped green onions and serve warm with rice or vegetables.

Notes

For a spicier twist, add a dash of chili flakes or sriracha to the glaze. This dish pairs beautifully with jasmine rice, quinoa, or steamed vegetables. Leftovers keep well in the fridge for up to 3 days.
