Ingredients
  

  • ¼ cup peanut butter
  • ¼ cup low-sodium soy sauce
  • 2 tbsp brown sugar or honey
  • 2 tbsp rice wine vinegar
  • ½ tbsp garlic minced
  • ½ tbsp ginger minced
  • 1 tsp sriracha sauce adjust to taste
  • 2 chicken breasts cooked and chopped
  • 3 cups coleslaw mix
  • ½ cup carrots grated, optional
  • ¼ cup cilantro chopped
  • ¼ cup roasted salted peanuts chopped
  • 4-6 tortillas large

Instructions
 

  • In a bowl, whisk together peanut butter, soy sauce, brown sugar (or honey), rice wine vinegar, garlic, ginger, and sriracha until smooth. Add water if needed to thin.
  • Cook chicken breasts (grill, bake, or sauté), then chop into bite-sized pieces.
  • In a large bowl, combine chicken, coleslaw mix, carrots, cilantro, and peanuts.
  • Pour peanut sauce over the mixture and toss to coat evenly.
  • Warm tortillas in microwave or skillet until pliable.
  • Spoon filling onto tortillas, roll tightly, and serve warm.

Notes

Swap chicken for tofu or shrimp for variety. Use gluten-free tortillas and tamari for a gluten-free option. Great for meal prep—store filling and sauce separately and assemble before serving.
