  • 0.75 cups granulated sugar Can use coconut sugar or a sugar substitute.
  • 1 large egg Can substitute with flaxseed meal or applesauce for a vegan option.
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line your baking sheets with parchment paper.
  • In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In another bowl, cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
  • Add the egg and vanilla extract, mixing until fully combined.
  • Gradually add the dry mixture to the wet ingredients, stirring until just combined.

Baking

  • Drop rounded tablespoon amounts of dough onto the prepared baking sheet, leaving space between them.
  • Bake in the preheated oven for 10-12 minutes until edges are lightly golden and centers are soft.
  • Remove from the oven and let cool on the baking sheet for one minute before transferring to a wire rack to cool completely.

Serving

  • Enjoy your wafers on their own or paired with milk, coffee, or fresh fruits.

Notes

Store cookies in an airtight container at room temperature for up to a week. To freeze, place cooled cookies in a freezer-safe container for up to 3 months.
