Ingredients
  

Salad

  • 2 cucumbers thinly sliced
  • 6 radishes thinly sliced
  • 2 tbsp fresh dill chopped
  • 2 tbsp red onion thinly sliced

Dressing

  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions
 

  • In a large bowl, combine the sliced cucumbers, radishes, red onion, and chopped fresh dill.
  • In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and black pepper.
  • Pour the dressing over the vegetables and toss gently to coat evenly.
  • Refrigerate the salad for about 15 minutes to allow the flavors to blend.
  • Serve chilled as a refreshing side dish.

Notes

For extra creaminess, you can add a spoonful of Greek yogurt or sour cream to the dressing. Best served fresh on the same day.
