Ingredients

  • 3 ripe bananas
  • cup peanut butter creamy
  • ½ cup chocolate chips semi-sweet or dark
  • 2 tsp coconut oil optional – helps chocolate set smoothly

Instructions
 

  • Peel the bananas and slice them into rounds about 1/4 inch thick.
  • Line a baking sheet with parchment paper and place half of the banana slices on it.
  • Add a small dollop (about 1/2 tsp) of peanut butter on each banana slice, then top with another banana slice to form a sandwich.
  • Freeze the banana sandwiches for about 60 minutes until firm.
  • In a microwave-safe bowl, melt the chocolate chips with the coconut oil in 30-second intervals, stirring until smooth.
  • Remove the banana bites from the freezer and dip each into the melted chocolate to coat halfway or fully, as desired.
  • Place the dipped bites back onto the parchment-lined baking sheet and freeze for another 30 minutes until the chocolate has set.
  • Serve immediately or store in an airtight container in the freezer for later snacking.

Notes

For extra flavor, sprinkle a little sea salt on the chocolate before it sets. These treats keep well in the freezer for up to 1–2 months.
