  • 1 cup rice (preferably long-grain)
  • 2 cups vegetable broth For flavor
  • 1 large onion, chopped For sweetness
  • 1 large bell pepper, chopped For color
  • 1 medium carrot, diced For crunch
  • 1 medium zucchini, diced For freshness
  • 2 cloves garlic, minced For aroma
  • 1 teaspoon paprika For warmth
  • 1 teaspoon salt To taste
  • ½ teaspoon black pepper For a little kick
  • 2 tablespoons olive oil For sautéing

Preparation

  • Start by washing and chopping all your vegetables. This helps everything cook evenly and keeps the preparation process smooth and efficient.
  • Measure out your rice and broth, ensuring you have everything ready.

Cooking

  • In a large pan, heat the olive oil over medium heat. Once hot, add the chopped onion and minced garlic. Sauté until the onion turns translucent, about 3-4 minutes.
  • Toss in the bell pepper, carrot, and zucchini. Stir frequently and cook for about 5 minutes until the vegetables soften slightly.
  • Stir in the rice and paprika to coat the rice evenly.
  • Pour in the vegetable broth along with salt and pepper. Raise the heat to bring the mixture to a boil.
  • Reduce the heat to low, cover the pan, and allow it to simmer for about 20 minutes.
  • After 20 minutes, remove the lid and check the rice. If it’s still liquid, cover and cook for an additional few minutes.
  • Once fully cooked, fluff the rice gently with a fork and serve hot.

Notes

This dish can be made in advance and reheated. If frozen, it can last for up to three months. Enjoy variations with seasonal vegetables or add protein such as chickpeas.
