Preparation

  • Gather all your ingredients. Chop the celery, red bell pepper, red onion, and hard-boiled eggs into bite-sized pieces.
  • Cook the elbow macaroni according to the package instructions until al dente. Be careful not to overcook.
  • Drain the macaroni and rinse it under cold water to cool and stop the cooking process.
  • In a large mixing bowl, combine the mayonnaise, sour cream, apple cider vinegar, and sugar. Stir until smooth.
  • Add the chopped celery, red bell pepper, red onion, and hard-boiled eggs to the dressing mixture.
  • Fold in the cooled macaroni gently.
  • Season with salt and pepper to taste.
  • Cover and chill in the refrigerator for at least 30 minutes before serving.
