Ingredients
  

Chicken & Vegetables

  • 4 chicken breasts boneless, skinless, cut into cubes
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes halved
  • 1 red bell pepper sliced

Tzatziki Sauce

  • 1 cup plain Greek yogurt
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • salt and black pepper to taste
  • 0.5 cup shredded mozzarella cheese optional

Instructions
 

  • Preheat oven to 190°C (375°F) and lightly grease a baking dish.
  • Place cubed chicken, broccoli, cherry tomatoes, and red bell pepper in the baking dish. Season with salt and pepper.
  • In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, oregano, salt, and pepper to make the tzatziki sauce.
  • Pour the tzatziki sauce evenly over the chicken and vegetables.
  • Sprinkle shredded mozzarella cheese on top if using.
  • Bake uncovered for 30–35 minutes, or until the chicken is fully cooked and vegetables are tender.
  • Remove from oven and let rest for 5 minutes before serving.

Notes

Serve with rice, quinoa, or warm pita bread. Leftovers can be refrigerated for up to 3 days.
