  • 1 can (20 oz) crushed pineapple with juice
  • 1 cup sugar
  • 4 large eggs beaten
  • ½ cup all-purpose flour
  • ½ cup melted butter
  • 1 tsp vanilla extract

Optional Topping

  • ½ cup crushed buttery crackers like Ritz
  • 2 Tbsp melted butter for topping

Instructions
 

  • Preheat oven to 350°F (175°C) and lightly grease an 8x8-inch baking dish.
  • In a large bowl, whisk together eggs, sugar, melted butter, flour, vanilla extract, and the entire can of crushed pineapple with juice until combined.
  • Pour the mixture into the prepared baking dish and spread evenly.
  • If using the topping, mix crushed crackers with melted butter and sprinkle over the pineapple mixture.
  • Bake for 35–40 minutes, or until golden and set in the center. Let cool slightly before serving.
  • Serve warm as a side dish with ham or turkey, or as a sweet dessert with whipped cream or vanilla ice cream.

Notes

This pineapple bake is an old-fashioned favorite that pairs beautifully with savory meats. You can also add shredded coconut or chopped pecans for extra flavor.
