Dry Ingredients

  • 2 cups all-purpose flour Can use gluten-free flour as a substitute
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt

Wet Ingredients

  • 1 cup buttermilk Can substitute with yogurt thinned with milk
  • ½ cup unsalted butter, melted Coconut oil can be used as a dairy-free option
  • 2 large eggs Can use flaxseed meal or egg replacer for a vegan version
  • 1 tsp vanilla extract

Fruits

  • 1 cup fresh berries (blueberries, strawberries, etc.) Choose your favorite berries
  • Optional powdered sugar for dusting For added sweetness

Preparation

  • Gather all the ingredients you’ll need. Measure everything carefully and ensure your fresh berries are washed and ready to go.
  • In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt. Whisk them together until evenly balanced.
  • In a separate bowl, whisk together the buttermilk, melted butter, eggs, and vanilla extract until smooth and creamy.
  • Pour the wet ingredients into the bowl with dry ingredients. Mix gently until just combined—be careful not to overmix.
  • Fold in the fresh berries into the batter, ensuring they are distributed evenly throughout.

Baking

  • Grease a baking dish with butter or cooking spray. Preheat the oven to 350°F (175°C).
  • Transfer the batter into the greased baking dish and spread it evenly.
  • Place the dish in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  • Once baked, let it cool for about 10 minutes. Dust with powdered sugar before serving, if desired.

Serving

  • Slice into squares or wedges, serve warm or at room temperature, and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Can be frozen for longer storage.
