  • 2 cups dried black-eyed peas rinsed and soaked overnight
  • 4 cups vegetable broth or water
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • salt and pepper to taste
  • 2 tbsp olive oil
  • fresh parsley for garnish

Instructions
 

  • Rinse the dried black-eyed peas thoroughly and soak them in water for at least 6 hours or overnight for best results.
  • Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.
  • Add the soaked peas, vegetable broth, cumin, smoked paprika, salt, and pepper to the pot. Stir well to combine.
  • Increase the heat and bring the mixture to a boil.
  • Once boiling, reduce the heat to low. Cover and let the peas simmer for about 45 minutes or until tender.
  • Check the texture of the peas. If they are still firm, continue to cook for another 10 minutes.
  • Adjust the seasoning as needed, adding more salt, pepper, or spices to taste.
  • Serve the black-eyed peas hot, garnished with fresh parsley. Enjoy them as a side dish or a main course.

Notes

For a richer flavor, sauté the spices in olive oil before adding the peas. You can add diced tomatoes, bell peppers, or kale for extra nutrition. To make it spicy, add jalapeños or red pepper flakes. Store leftovers in an airtight container for up to 5 days or freeze for 3 months. Reheat on the stove with a splash of broth or water.
