Preparation

  • Start by washing the ripe apricots thoroughly. Once clean, pit and chop them into small pieces to ensure even cooking.

Cooking

  • In a large pot, combine the chopped apricots, sugar, lemon juice, and water. Stir the mixture well to ensure the sugar is evenly distributed.
  • Place the pot over medium heat and bring the mixture to a gentle boil.
  • Once boiling, reduce the heat to low and let the mixture simmer for about 20-30 minutes, stirring frequently to prevent sticking.
  • To check if the jam is ready, take a spoonful and let it cool briefly. If it holds its shape and does not flow back together, it’s ready!

Jarring

  • While the jam is simmering, prepare your jars by sterilizing them in boiling water.
  • Carefully pour the jam into the sterilized jars, leaving a small amount of space at the top.
  • Seal the jars tightly with their lids, ensuring a vacuum seal as they cool.

Storage

  • Allow the jars to cool completely at room temperature, then store them in the refrigerator.

Notes

For added flavor, consider adding a pinch of cinnamon or a splash of vanilla extract. Ensure jars are always sterilized to prevent spoilage.
