  • 2 pounds fresh apricots – pitted and chopped Use ripe apricots for best flavor.
  • 4 cups granulated sugar Can be adjusted to taste.
  • ¼ cup lemon juice Fresh for best flavor.
  • 1 packet pectin (optional) Use for a thicker consistency.

Preparation

  • Start by washing and pitting the apricots. Once pitted, chop them into small pieces and measure out your ingredients.

Cooking

  • In a large pot, combine the chopped apricots and lemon juice. If using pectin, add it to the mixture at this stage. Heat over medium until it starts to bubble, stirring regularly.
  • Once boiling, gradually add sugar while stirring constantly until fully dissolved.
  • Continue to boil the mixture for about 10-15 minutes, stirring frequently to avoid burning.
  • To check consistency, place a small dollop of jam on a plate. If it holds shape, it's ready. If not, boil for a few more minutes.
  • Remove from heat once satisfied with the texture. Allow to cool slightly before transferring into sterilized jars.
  • Pour the warm jam into jars, leaving space for expansion. Seal tightly while still warm.
  • Allow jars to cool completely at room temperature before storing.

Notes

Store sealed jars in a cool, dark place for up to a year. Once opened, refrigerate and use within a few weeks.
