  • 2 pounds boneless skinless chicken thighs approximately 8 pieces
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil divided
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder

Preparation

  • Preheat your oven to 400°F with the rack set in the center position.
  • Remove the chicken thighs from the refrigerator and let them sit out for about 20 minutes.
  • Pat the chicken pieces dry with paper towels.
  • Sprinkle kosher salt over both sides of the chicken thighs and let sit for 2 minutes.
  • Sprinkle garlic powder, smoked paprika, and onion powder evenly on both sides of each thigh.
  • Brush a baking sheet with 1 tablespoon of olive oil.
  • Arrange the seasoned chicken thighs on the prepared baking sheet, leaving space between each piece.
  • Drizzle the remaining tablespoon of olive oil over the chicken.

Cooking

  • Bake in the preheated oven for 18 minutes.
  • Gently flip each chicken thigh and bake for an additional 14 minutes.
  • Check the internal temperature, ensuring it reaches 175°F at the thickest part.
  • Let the chicken rest for about 3 minutes before serving.

Notes

Leftovers can be stored in an airtight container for 3-4 days in the refrigerator. For freezing, wrap tightly and they can last up to 3 months. Reheat in the oven at 350°F for 10-15 minutes.
