Preparation

  • Begin by rinsing the dried black-eyed peas thoroughly under cold water. Soak them in a large bowl of water overnight.

Cooking the Base

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté for about 5 minutes or until softened and fragrant.

Add Peas and Seasoning

  • Drain and set aside the soaked black-eyed peas. Add them to the pot, stir in the water, and bring the mixture to a gentle boil. Season with salt, black pepper, and smoked paprika.

Incorporate Optional Meat

  • If using a smoked ham hock or bacon, add it to the pot now.

Simmering

  • Reduce the heat to low, cover the pot, and let the Easy Black Eyed Peas simmer for about 30-40 minutes, until tender but not mushy.

Taste and Adjust

  • After simmering, taste the dish for seasoning and adjust if necessary.

Final Touches

  • Remove from heat, discard the ham hock if used, and serve warm.

Notes
