  • 4 pieces chicken breasts Ensure they are thawed.
  • 8 oz Boursin cheese Can substitute with a dairy-free alternative.
  • 3 cloves garlic, minced Can substitute with garlic powder if sensitive.
  • 8 oz mushrooms, sliced Use your favorite type of mushrooms.
  • 1 cup heavy cream Dairy-free options include cashew or coconut cream.
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste

Preparation

  • Gather all your ingredients. Thaw chicken breasts and wash and slice the mushrooms. Mince the garlic.

Cooking

  • Heat olive oil in a skillet over medium-high heat.
  • Season chicken breasts with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes per side until golden brown and cooked through.
  • Remove chicken from skillet and cover loosely with foil.
  • In the same skillet, add sliced mushrooms and cook for about 5 minutes until softened and browned.
  • Add minced garlic to the skillet and cook for an additional minute until fragrant.
  • Pour in heavy cream, stir to combine, then add Boursin cheese. Stir until the sauce is smooth.
  • Return the chicken to the skillet and let simmer in the sauce for a couple of minutes.
  • Taste and adjust seasoning if needed.
  • Serve hot with sauce spooned over each chicken breast.

Notes

To enhance the flavor, consider adding fresh herbs like parsley or thyme as a garnish. A squeeze of lemon juice can also brighten the dish.
