  • 1 cup shredded cheddar cheese Feel free to use a mix of cheeses.
  • ½ cup breadcrumbs Can substitute with gluten-free crumbs if desired.
  • ¼ cup grated Parmesan cheese Optional for added flavor.
  • 2 large eggs To bind the ingredients.
  • 1 teaspoon garlic powder
  • ½ teaspoon salt Adjust to taste.
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil Use for drizzling before baking.

Preparation

  • Gather all ingredients, including chopping the broccoli and shredding the cheese.
  • Steam the chopped broccoli until tender for about 5 minutes, then let it cool.
  • In a large bowl, mix the steamed broccoli, cheddar cheese, breadcrumbs, Parmesan cheese, eggs, garlic powder, salt, and black pepper until well combined.
  • Form the mixture into small, round patties about 1/2 inch thick.
  • Line a baking sheet with parchment paper and place the patties on it with space in between.
  • Drizzle olive oil over the patties for added flavor and browning.

Baking

  • Preheat the oven to 400°F (200°C) and bake the patties for 20 to 25 minutes until golden brown.
  • Allow the patties to cool slightly before serving.

Notes

These patties freeze well. Store in an airtight container in the fridge for up to 4 days or freeze for up to 2 months.
