Preparation

  • Gather all your ingredients. Slice the red and green bell peppers and set them aside.
  • Place the chicken breasts at the bottom of the crockpot, and layer the sliced bell peppers over the chicken.

Cooking

  • Pour in the chicken broth and diced tomatoes, ensuring the chicken is covered.
  • Sprinkle the Cajun spice mix evenly over the top.
  • Cover the crockpot and set it to cook on low for 6-8 hours, or high for 3-4 hours.
  • Once the cooking time has elapsed, carefully remove the chicken from the crockpot and shred it into bite-sized pieces.
