Ingredients
  

Bread Dough

  • 3 cups all-purpose flour
  • 1 packet active dry yeast
  • 1 cup warm water around 110°F / 43°C
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 tbsp olive oil

Filling

  • 2 large onions caramelized
  • 1 cup Gruyère cheese shredded
  • 1 egg for egg wash
  • fresh herbs optional, for garnish

Instructions
 

  • In a bowl, mix warm water, sugar, and yeast. Let sit for 5–10 minutes until frothy.
  • Combine flour and salt in another large bowl.
  • Add the yeast mixture and olive oil to the flour. Stir until dough forms.
  • Knead on a floured surface for 8–10 minutes until smooth and elastic.
  • Place dough in an oiled bowl, cover, and let rise for 1 hour or until doubled.
  • Punch down dough and roll out into a large rectangle (¼ inch thick).
  • Spread caramelized onions evenly over the dough, then sprinkle with shredded Gruyère.
  • Roll the dough into a log and shape it into a wreath by pinching the ends together.
  • Place on a parchment-lined baking sheet, cover, and let rise for 30 minutes.
  • Preheat oven to 375°F (190°C). Brush with egg wash and bake for 25–30 minutes until golden brown.
  • Cool on a wire rack and garnish with fresh herbs before serving.

Notes

For extra flavor, mix herbs such as thyme or rosemary into the caramelized onions. The bread can be made ahead and frozen. Reheat at 350°F for 10–15 minutes to restore crispness.
