  • 2 pieces chicken breasts Boneless and skinless
  • 1 cup mixed vegetables (bell peppers, broccoli, carrots) Chopped into bite-sized pieces
  • 2 tablespoons olive oil Can substitute with avocado oil or melted coconut oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika Can substitute with cumin or Italian seasoning
  • to taste salt and pepper
  • to taste fresh herbs Optional, for garnish

Instructions
 

Preparation

  • Gather all your ingredients. Wash and chop the mixed vegetables into bite-sized pieces.
  • Preheat your oven to 400°F (200°C).

Marinating

  • In a bowl, combine the olive oil, garlic powder, paprika, salt, and pepper. Mix well.
  • Add the chicken breasts to the bowl and coat them thoroughly with the marinade.

Baking

  • Line a baking sheet with parchment paper. Place the coated chicken breasts in the center.
  • Arrange the chopped mixed vegetables around the chicken.
  • Bake in the preheated oven for 20-25 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

Garnishing and Serving

  • Once cooked, remove from the oven and sprinkle with fresh herbs if using.
  • Plate the dish and serve warm.

Notes

Avoid overcooking the chicken. Check for doneness every few minutes if necessary. You can customize this recipe with seasonal vegetables or different herbs and spices.
