  • 4 large flour tortillas Can substitute with whole wheat or corn tortillas.
  • 2 cups cooked chicken, shredded Rotisserie chicken works well for convenience.
  • 8 slices bacon, cooked and crumbled Turkey bacon or vegetarian bacon can be used.
  • 2 cups Mexican cheese blend, shredded Cheddar, Monterey Jack, or pepper jack can be used.
  • ½ cup ranch dressing Homemade ranch or avocado dressing can be a twist.
  • 1 cup tomatoes, diced
  • ¼ cup red onion, finely chopped
  • 2 tbsp fresh cilantro, chopped
  • 2 tbsp butter For cooking.

Preparation

  • Gather all your ingredients and ensure your workspace is clean and organized.
  • In a mixing bowl, combine the shredded chicken with ranch dressing. Add a little salt and pepper if desired.
  • Mix the crumbled bacon, diced tomatoes, finely chopped onion, and cilantro into the chicken mixture, ensuring everything is well incorporated.
  • Warm the tortillas in the microwave for 10-15 seconds to make them easier to fold.

Cooking

  • Place a tortilla on a flat surface and sprinkle a generous amount of the Mexican cheese blend over half of the tortilla. Add a scoop of your chicken mixture.
  • Add another layer of cheese on top of the chicken mix, then fold the tortilla in half.
  • In a skillet over medium heat, melt the butter completely.
  • Cook the folded tortilla in the skillet for 2-3 minutes until golden brown, then carefully flip and cook for another 2-3 minutes.
  • Remove from the skillet once crispy and the cheese inside is melted. Allow it to cool slightly, then slice into wedges.
  • Serve immediately with extra ranch dressing or salsa on the side.

Notes

To store, allow to cool completely, wrap in foil or place in an airtight container. Store in the fridge for up to 3 days or freeze for up to 2 months. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
