Instructions
 

Preparation

  • Wash the baby potatoes thoroughly and cut in half or quarters if larger than a bite.
  • Mince the garlic and have all your ingredients ready.

Cooking

  • Fill a pot with salted water and bring to a boil, then add the baby potatoes and cook for 15-20 minutes until tender.
  • Drain the potatoes and set aside to cool slightly.
  • In a large skillet, melt the butter over medium heat.
  • Add the minced garlic to the butter and sauté for 1-2 minutes until fragrant.
  • Lower the heat and stir in the heavy cream, garlic powder, salt, and pepper. Simmer for 3-5 minutes until slightly thickened.
  • Add the cooked potatoes to the skillet and toss to coat them in the sauce, cooking for another minute.
  • Taste and adjust seasoning if necessary.
  • Transfer to a serving dish, garnishing with freshly chopped parsley.

Notes

This dish can be customized with herbs like thyme, rosemary, or a splash of lemon juice. It's perfect for meal prepping and leftovers.
