Preparation

  • Gather all your ingredients. Slice the bell pepper and onion into thin strips and cut the chicken breasts into small pieces.

Cooking

  • Place the chicken breasts into the slow cooker followed by the sliced bell pepper and onion, ensuring an even distribution.
  • Sprinkle the fajita seasoning over the chicken and vegetables. Mix everything well to coat evenly.
  • If using canned diced tomatoes, add them now for moisture.
  • Cover the slow cooker and set it to cook on low for 6-8 hours or high for 3-4 hours.
  • Once cooked, shred the chicken in the slow cooker using two forks and stir back into the mixture.
  • Taste and adjust seasoning as needed.
