For the filling

  • 4 packages cream cheese, softened Use dairy-free cream cheese for a vegan option.
  • 1 cups sugar Used for sweetness.
  • 4 large eggs Use flax eggs for a vegan option.
  • 1 teaspoon vanilla extract Adds flavor.
  • 1 cups sour cream Can substitute with Greek yogurt.
  • 0.5 cups powdered sugar For topping.

Preparation

  • Preheat the oven to 325°F (160°C).
  • In a medium bowl, combine the graham cracker crumbs, ½ cup sugar, and melted butter. Mix until well combined.
  • Press the crumb mixture firmly into the bottom of a 9-inch springform pan.
  • In a large bowl, beat the softened cream cheese until smooth.
  • Gradually add 1 cup sugar to the cream cheese mixture, beating well after each addition.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the vanilla extract.
  • Pour the cream cheese mixture over the prepared crust.
  • Bake in the preheated oven for 55-60 minutes, until the center is set yet slightly jiggly.
  • Allow the cheesecake to cool in the pan.
  • Combine sour cream and powdered sugar and spread it over the cooled cheesecake.
  • Refrigerate for at least 4 hours before serving.

Notes

Store leftovers in the fridge for 3-5 days in an airtight container, or freeze for up to a month.
