Ingredients
  

Casserole Base

  • 2 cups cooked rice
  • 2 cups cooked chicken, shredded

Creamy Mixture

  • 1 can cream of chicken soup Can be substituted with a dairy-free option.
  • 1 cup milk Can use dairy-free milk if needed.
  • 1 cup shredded cheese Cheddar or your choice.
  • 1 cup frozen mixed vegetables Optional addition.
  • Salt and pepper to taste
  • Paprika for garnish Optional.

Preparation

  • Start by gathering all your ingredients together. If you haven’t cooked your rice or chicken yet, take the time to do so. Once prepared, let them cool slightly before mixing.

Cooking

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cooked rice and shredded chicken.
  • Add the can of cream of chicken soup and cup of milk to create a creamy texture. Stir until well combined.
  • Mix in the shredded cheese and optional frozen mixed vegetables.
  • Season the mixture with salt and pepper to taste.
  • Pour the combined mixture into a greased casserole dish, spreading evenly.
  • Sprinkle paprika over the top for garnish.
  • Cover the dish with foil and bake for 30 minutes, then uncover and bake for an additional 15 minutes.
  • Allow the casserole to cool slightly before serving.

Notes

Store leftovers in an airtight container for 3–4 days in the refrigerator. This casserole also freezes well, ensure it’s cooled before freezing.
