  • 2 cups leftover rice Ensure it's cold and dry
  • 3 pieces eggs Scrambled before adding to the fried rice
  • 1 cup mixed vegetables (like peas, carrots, and corn) Fresh or frozen will work
  • 3 tablespoons soy sauce Use tamari or coconut aminos for gluten-free
  • 2 tablespoons oil (vegetable or sesame) Neutral oil recommended
  • 2 pieces green onions, chopped For garnishing

Preparation

  • Clear your counter and gather all your ingredients.
  • Chop the green onions and ensure your leftover rice is separated.

Cooking

  • In a large skillet or a wok, heat the oil over medium heat.
  • Add the eggs to the skillet and scramble until fully cooked and fluffy.
  • Remove the scrambled eggs from the skillet and set aside.
  • In the same skillet, add your mixed vegetables and sauté for about 3-4 minutes until tender.
  • Add the leftover rice to the skillet and stir together with the vegetables for about 2-3 minutes.
  • Pour in the soy sauce and stir-fry everything together for about 2-3 minutes until heated through.
  • Fold the scrambled eggs back into the rice mixture and stir until well combined.
  • Garnish with the chopped green onions before serving.
  • Optional: Let it rest for a minute before serving for enhanced flavor.
