  • 4 pieces pork chops Lean cuts preferred
  • ¼ cup honey Can substitute with maple syrup
  • ¼ cup Dijon mustard Can substitute with whole grain mustard
  • 2 tablespoons olive oil Can substitute with vegetable oil or butter
  • 1 teaspoon garlic powder Or use 2-3 cloves of minced fresh garlic
  • to taste Salt and pepper

Vegetables

  • 2 cups baby potatoes, halved Any small potatoes or diced sweet potatoes can be used
  • fresh parsley for garnish Adds color and flavor to the dish

Instructions
 

Preparation

  • Ensure your workspace is clean, and gather all the ingredients.
  • Preheat your oven to 400°F (200°C) or set your air fryer to 375°F (190°C).

Marinade

  • In a small bowl, whisk together honey, Dijon mustard, garlic powder, salt, and pepper to create the marinade.

Cooking

  • Heat olive oil in a large skillet over medium heat and sear the pork chops for 3-4 minutes on each side until golden-brown.
  • Add the halved baby potatoes to the skillet and stir to combine.
  • Pour the honey mustard mixture over the pork chops and potatoes, then gently stir to coat everything.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, until the pork reaches an internal temperature of 145°F (63°C).

Serving

  • Garnish with freshly chopped parsley before serving.
  • Serve hot and enjoy!

Notes

For best results, consider marinating the pork chops in the honey mustard mixture for a few hours or overnight. This enhances the flavor.
