Ingredients
  

  • 2 cups tortilla chips
  • 1 can (15 oz) refried beans
  • 1 cup cooked ground beef or turkey
  • 1 cup salsa mild, medium, or hot
  • 2 cups shredded cheese cheddar or Mexican blend
  • 1 cup corn canned or frozen
  • 1 tsp taco seasoning
  • sour cream for serving (optional)
  • chopped green onions for garnish (optional)

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Spread half of the tortilla chips in a 9×13 inch baking dish to create the base layer.
  • Spread the refried beans evenly over the chips.
  • Add a layer of cooked ground beef or turkey on top of the beans.
  • Pour half of the salsa evenly over the meat layer.
  • Sprinkle corn and taco seasoning evenly over the salsa.
  • Add the remaining tortilla chips on top, followed by the rest of the salsa.
  • Top generously with shredded cheese.
  • Bake for 20–25 minutes, or until the cheese is melted and bubbly.
  • Let the casserole cool slightly before serving. Garnish with sour cream and chopped green onions if desired.

Notes

For a vegetarian version, substitute the meat with black beans or sautéed vegetables. To make it spicier, use hot salsa or add diced jalapeños. This casserole can be made ahead and refrigerated overnight—just add a few extra minutes to the baking time.
