Ingredients
  

Sausage Rigatoni

  • 12 oz rigatoni pasta
  • 1 lb Italian sausage casings removed
  • 2 cloves garlic minced
  • 1 cup marinara sauce
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • salt and black pepper to taste
  • red pepper flakes optional
  • grated Parmesan cheese for serving

Instructions
 

  • Bring a large pot of salted water to a boil and cook rigatoni according to package instructions. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Add sausage and cook, breaking it up, until browned and cooked through.
  • Add minced garlic to the skillet and cook for 30 seconds until fragrant.
  • Stir in marinara sauce and simmer for 5 minutes. Add spinach and cook until wilted.
  • Add cooked rigatoni to the skillet and toss until evenly coated. Season with salt, pepper, and red pepper flakes if desired.
  • Serve hot topped with grated Parmesan cheese.

Notes

You can substitute cream or ricotta for a creamier sauce, or use spicy sausage for extra heat.
