  • 1 lb boneless skinless chicken thighs
  • 3 tbsp potato starch
  • 3 tbsp all-purpose flour
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 3 tbsp neutral oil (for pan frying)
  • 8 cloves garlic, minced
  • 2 stalks green onions, chopped (green and white parts separated)
  • 1 tsp red chili flakes

Sauce Ingredients

  • ½ cup chicken stock (or substitute with water & chicken bouillon)
  • 3 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp dark soy sauce
  • 1 tsp cornstarch

Garnish

  • green onions (green part only)
  • sesame seeds (for topping)

Instructions
 

Preparation

  • Begin by gathering all your ingredients. Ensure you have a large frying pan, measuring spoons, and a mixing bowl handy.
  • Using paper towels, pat your chicken thighs dry.
  • In a large plate, mix the potato starch, all-purpose flour, garlic powder, salt, and black pepper.
  • Lightly coat each chicken thigh in the flour mixture, shaking off any excess.
  • In a large frying pan, heat the neutral oil over medium-high heat.

Cooking

  • Once the oil is hot, add the coated chicken thighs to the pan. Fry for about 6-7 minutes on each side or until golden brown.
  • While the chicken is cooking, in a mixing bowl, combine the chicken stock, honey, rice vinegar, dark soy sauce, and cornstarch. Whisk until well blended.
  • After removing the chicken from the pan, add the minced garlic, the white parts of the green onions, and red chili flakes to the remaining oil in the pan. Sauté for about 3 minutes until the garlic turns golden.
  • Pour the prepared sauce into the pan, stirring constantly until it thickens, about a minute. Add the chicken back into the pan, coating it in the sauce, and let it simmer for about 5 minutes.

Serving

  • Garnish with the green parts of the green onions and sesame seeds. Serve with steamed rice or veggies.

Notes

You can prepare the sauce in advance, and consider marinating the chicken for at least 30 minutes for enhanced flavors. Store leftovers in an airtight container for 3-4 days in the fridge or freeze for up to 3 months.
