Easy Taco Casserole That Makes Weeknights Exciting Again

Ingredients
  

For the casserole

  • 1 pound ground beef
  • 1 packet taco seasoning (approx. 1 oz / 28g)
  • ½ cup water
  • 1 can diced tomatoes and green chilies (10 ounce / 280g), undrained
  • 1 can black beans (15 ounce / 425g), rinsed and drained
  • 1 can corn (15 ounce / 425g), drained
  • 8-10 pieces flour tortillas cut into bite-sized pieces
  • 2 cups shredded cheddar cheese

Optional toppings

  • sour cream
  • salsa
  • guacamole
  • chopped cilantro

Instructions
 

Preparation

  • Gather all the ingredients for the casserole.
  • Dice tomatoes and chilies if using fresh ones, and measure out the beans and corn.

Cooking

  • In a large skillet, brown the ground beef over medium heat until fully cooked, about 6-8 minutes.
  • Drain any excess grease from the browned beef.
  • Stir in the taco seasoning and water. Bring to a simmer and wait about 5 minutes to thicken.
  • Add the undrained diced tomatoes, black beans, and corn to the skillet. Cook for another 2-3 minutes.

Layering

  • In a 9x13 inch baking dish, spread a thin layer of the beef mixture.
  • Top with tortilla pieces, then sprinkle a layer of shredded cheese.
  • Repeat layering until all ingredients are used, finishing with cheese on top.

Baking

  • Preheat the oven to 350°F (175°C). Bake for 20-25 minutes until the cheese is melted and bubbly.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. You can also freeze portions for future meals. Reheat in the microwave or oven until hot throughout.
