  • 1 lb ground turkey lean
  • 1 can (15 oz) kidney beans drained and rinsed
  • 1 can (15 oz) black beans drained and rinsed
  • 1 can (28 oz) diced tomatoes

  • Stir in the chili powder, cumin, salt, and pepper. Cook for 1 minute to release the spices’ flavor.
  • Add the diced tomatoes, kidney beans, and black beans. Stir well to combine.
  • If using, add the bell peppers and corn. Mix everything thoroughly.
  • Bring the mixture to a boil, then reduce the heat to low and simmer for 20–30 minutes.
  • Taste and adjust the seasoning as needed.
  • Serve hot, garnished with shredded cheese, sour cream, or chopped green onions if desired.

Notes

For a spicier chili, add jalapeños or crushed red pepper. To make it vegetarian, replace turkey with lentils or plant-based meat. Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
