  • 1 cup corn kernels (fresh or frozen) If using frozen, thaw beforehand
  • ½ cup diced bell pepper (any color)
  • ¼ cup diced onion
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 tablespoon lime juice

  • 8 small corn tortillas If gluten-free, choose gluten-free corn tortillas
  • Oil for frying Use a neutral oil like canola or vegetable oil

Preparation

  • Gather all your ingredients. Drain and rinse the black beans, and if using frozen corn, ensure it is thawed. Dice the bell pepper and onion finely for even cooking.

Cooking the Filling

  • In a mixing bowl, combine the drained black beans, corn kernels, diced bell pepper, onion, cumin, chili powder, and lime juice. Mix well until all ingredients are evenly combined.

Preparing the Tortillas

  • Heat the corn tortillas in a non-stick pan over medium heat for about 30 seconds on each side until pliable. This helps prevent breakage when rolling.

Rolling the Taquitos

  • Spoon a generous amount of the bean mixture along the center of each tortilla and roll tightly, leaving the ends open to avoid spillage.

Frying

  • In a large frying pan, add enough oil to cover the bottom generously and heat it over medium-high heat.
  • Carefully place the rolled taquitos in the hot oil, seam side down, and fry for approximately 2-3 minutes on each side until golden brown and crispy.
  • Once golden, lift the taquitos out of the oil and drain on a paper towel-lined plate.

Serving

  • Serve the taquitos hot with your favorite dipping sauces like guacamole, salsa, or a vegan sour cream.

Notes

For extra flavor, consider adding garlic powder or fresh cilantro to the filling. You can also bake them in a preheated oven at 400°F until crispy for a healthier option.
