  • 2 tablespoons olive oil (divided)
  • 1 pound ground turkey
  • 1 small sweet onion (finely diced)
  • 1 cup shredded carrots
  • 3 cloves garlic (finely minced)
  • 1 teaspoon finely minced fresh ginger
  • ¼ cup chicken broth Can be substituted with vegetable broth
  • 1 small head cabbage (about 8 cups shredded)
  • 3 tablespoons soy sauce or tamari Use coconut aminos for a gluten-free option
  • 1 tablespoon rice vinegar Apple cider vinegar can be used as a substitute
  • ¾ teaspoon salt Adjust to taste
  • ½ teaspoon black pepper
  • 1 teaspoon toasted sesame oil
  • 1 cup cooked white rice (optional) Can substitute with cauliflower rice for a low-carb option
  • 1 bunch green onions (green parts only, thinly sliced, for garnish)

Instructions
 

Preparation

  • Start by clearing your kitchen counter and ensuring you have all your ingredients at hand.

Cooking

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • Add the ground turkey to the skillet and cook for about 5-6 minutes, stirring occasionally.
  • Push the turkey to one side of the pan and add the diced onion and the remaining tablespoon of olive oil to the other side.
  • Sauté for 3-4 minutes until the onion becomes translucent.
  • Add the shredded carrots, minced garlic, and minced ginger into the skillet and cook for an additional 2 minutes, stirring continuously.
  • Pour in the chicken broth and scrape up any brown bits from the bottom of the pan.
  • Add the shredded cabbage and stir in the soy sauce, rice vinegar, salt, and black pepper. Cover the skillet.
  • Reduce the heat to medium-low and let it cook for 12-15 minutes until the cabbage is tender.
  • Remove from heat and drizzle toasted sesame oil over the mixture, stirring to combine.
  • Serve the egg roll in a bowl over a scoop of cooked white rice, if desired.
  • Top with sliced green onions, toasted sesame seeds, and a drizzle of sriracha mayo if using.
