Ingredients
  

Dry Ingredients

  • 1 cup almond flour
  • ½ cup protein powder any flavor of choice
  • ½ tsp baking soda
  • ¼ tsp salt

Wet Ingredients

  • ¼ cup honey or maple syrup
  • ¼ cup almond butter or peanut butter
  • ½ tsp vanilla extract

Optional Add-ins

  • chocolate chips, chopped nuts, or dried fruit as desired

Instructions
 

  • Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  • In a medium bowl, mix almond flour, protein powder, baking soda, and salt.
  • In another bowl, whisk together honey (or maple syrup), almond butter (or peanut butter), and vanilla extract until smooth.
  • Combine wet and dry ingredients, stirring until a dough forms. Add optional mix-ins like chocolate chips or nuts.
  • Scoop tablespoons of dough onto the baking sheet and flatten slightly.
  • Bake for 10–12 minutes or until golden brown around the edges.
  • Cool on the sheet for 2 minutes, then transfer to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to 1 week, or refrigerate for longer freshness. For a vegan option, use maple syrup and plant-based protein powder. These cookies freeze well and make great pre-workout snacks.
