  • ¼ cup fresh parsley, chopped

Dressing Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon everything bagel seasoning

Preparation

  • Gather all the ingredients.
  • Rinse and drain the chickpeas thoroughly.
  • Halve the cherry tomatoes, dice the cucumber and red onion, and finely chop the parsley.

Mixing

  • In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
  • Toss everything together briefly.

Dressing the Salad

  • In a small bowl, whisk together olive oil, apple cider vinegar, everything bagel seasoning, salt, and pepper.
  • Pour the dressing over the salad and gently toss until ingredients are coated.

Finishing Touches

  • Let the salad sit for at least 10 minutes to meld flavors.

Notes
