Preparation

  • Preheat your oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.
  • In a large mixing bowl, combine the mashed bananas and melted butter.
  • Mix in the granulated sugar and brown sugar until well combined.
  • Beat in eggs one at a time, followed by the vanilla extract and freshly brewed espresso.

Mixing Dry Ingredients

  • In another bowl, whisk together flour, baking soda, salt, and optional cinnamon.
  • Gradually fold the dry mixture into the wet mixture using a spatula until just combined.

Add-ins and Baking

  • If desired, fold in any nuts or chocolate chips.
  • Transfer the batter into the prepared loaf pan and smooth the top.
  • Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted comes out clean.
