Festive Christmas Morning Cranberry Muffins with Orange Glaze

Ingredients
  

Streusel Topping

  • 3 tablespoons all-purpose flour
  • 2 tablespoons packed light brown sugar
  • ¼ teaspoon ground cinnamon
  • 2 tablespoons softened butter or margarine

Muffin Batter

  • 1 ¾ cups all-purpose flour
  • cup sugar
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 large egg
  • cup milk
  • cup vegetable oil
  • 1 teaspoon grated orange zest
  • 1 cup fresh cranberries (whole or coarsely chopped)

Orange Glaze

  • cup confectioners’ sugar
  • 2 ½ teaspoons orange juice

Instructions
 

Preparation

  • In a small bowl, combine 3 tablespoons of all-purpose flour, 2 tablespoons of packed light brown sugar, and 1/4 teaspoon of ground cinnamon. Add 2 tablespoons of softened butter or margarine and mix until crumbly. Set aside.
  • Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners or spray with non-stick cooking spray.

Muffin Batter

  • In a large mixing bowl, whisk together 1 3/4 cups of all-purpose flour, 1/3 cup of sugar, 1 1/2 teaspoons of baking powder, 1/4 teaspoon of baking soda, 1/4 teaspoon of ground cinnamon, and 1/4 teaspoon of salt.
  • In another bowl, beat 1 large egg, then mix in 2/3 cup of milk, 1/3 cup of vegetable oil, and 1 teaspoon of grated orange zest until smooth.
  • Slowly pour the wet mixture into the dry ingredients and stir gently until just combined.

Combine Ingredients

  • Gently fold in 1 cup of fresh cranberries.
  • Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full, and sprinkle the streusel topping over each muffin.

Baking

  • Bake in the preheated oven for about 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the muffins to cool slightly.

Glazing

  • In a small bowl, mix 1/3 cup of confectioners’ sugar with 2 1/2 teaspoons of orange juice until smooth and drizzle over the muffins.

Serving

  • Serve the muffins on a beautiful platter and enjoy!

Notes

For a vegan option, replace the egg with a flaxseed egg and use plant-based milk and butter. Store muffins at room temperature for up to 3 days or refrigerated for up to a week.
