Ingredients
  

For the cake

  • 2 cups all-purpose flour Can substitute with whole wheat flour.
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup sour cream Can replace with Greek yogurt or dairy-free sour cream.
  • 2 large eggs For vegan version, replace with flaxseed meal mixed with water.
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 tablespoon ground cinnamon

For the crumb topping

  • ½ cup brown sugar
  • ½ cup chopped nuts (optional) Walnuts, pecans, or almonds can be used.

Preparation

  • Start by gathering all your ingredients. Make sure the butter is softened to room temperature for easy creaming with sugar.
  • Preheat your oven to 350°F (175°C). This step is crucial for ensuring even baking.
  • Prepare your 9x13 inch baking pan by greasing and flouring it.

Mixing Batter

  • In a large bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy, about 3-5 minutes.
  • Mix in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract and sour cream until smooth.
  • In another bowl, whisk together flour, baking powder, and salt, then gradually add to the wet ingredients. Mix until just combined.

Crumb Topping

  • In a small bowl, mix together brown sugar, ground cinnamon, and chopped nuts to create the crumb topping.

Assembly and Baking

  • Pour half of the batter into the prepared pan, spread evenly, sprinkle half of the crumb topping over it, then layer the remaining batter and crumb topping.
  • Bake for 30-35 minutes or until a toothpick inserted comes out clean.

Cooling and Serving

  • Let the cake cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
  • Slice and serve warm or at room temperature.

Notes

Store in an airtight container at room temperature. Can be frozen for up to three months. Best served with fresh fruit, whipped cream, or ice cream.
