Ingredients

  • 3 lbs beef roast chuck or brisket recommended
  • 1 cup cranberry sauce homemade or store-bought
  • ½ cup balsamic vinegar
  • 1 onion sliced
  • 4 cloves garlic minced
  • 2 tbsp olive oil
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 350°F (175°C) and prepare all ingredients.
  • Season the beef roast generously with salt and pepper on all sides.
  • In a large skillet, heat olive oil over medium heat and sear the beef on all sides until browned (3–4 minutes per side).
  • Place sliced onions and minced garlic at the bottom of a roasting pan.
  • Set the seared beef on top of the onions and garlic mixture.
  • In a mixing bowl, whisk together cranberry sauce and balsamic vinegar until smooth.
  • Pour the cranberry-balsamic mixture evenly over the roast.
  • Cover the roasting pan tightly with aluminum foil and bake for 2 hours.
  • Remove the foil and roast uncovered for an additional 30 minutes to allow browning.
  • Remove from the oven and let the roast rest for 10 minutes before slicing. Serve with the pan sauce.

Notes

For extra flavor, add a few sprigs of rosemary or thyme to the roasting pan. This roast pairs beautifully with mashed potatoes, roasted vegetables, or rice. Leftovers can be stored in the fridge for 3 days or frozen for up to 3 months.
