Ingredients
  

Cake

  • 1 box cake mix (any flavor) follow box instructions
  • 3 large eggs
  • ½ cup vegetable oil
  • 1 cup water
  • green food coloring a few drops

Decoration

  • 2 cups Lucky Charms cereal for decoration
  • 2 cups buttercream frosting store-bought or homemade
  • fondant (green, black, gold, and white) for hat decoration
  • edible gold stars or coins optional for decoration

Instructions
 

  • Preheat oven according to the cake mix instructions. Grease and flour two 9-inch round cake pans.
  • In a large bowl, combine cake mix, eggs, oil, and water. Add green food coloring and mix until smooth and evenly tinted.
  • Pour the batter evenly into the prepared pans and bake per box instructions, or until a toothpick comes out clean.
  • Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.
  • Spread buttercream between the cake layers and over the top and sides until smooth.
  • Press Lucky Charms cereal onto the top and sides for decoration.
  • Roll out green fondant to form the hat top and brim. Add a black fondant band and gold buckle for detail.
  • Place the fondant hat on top of the cake. Decorate with edible gold stars or coins for a magical finish.
  • Slice, serve, and enjoy this festive St. Patrick’s Day treat!

Notes

Store leftover cake in an airtight container in the refrigerator for up to 5 days. Freeze for up to 3 months, thawing overnight in the fridge. For a vegan version, use flax eggs and plant-based frosting.
