Ingredients
  

  • 6 large eggs hard-boiled
  • ¼ cup mayonnaise or Greek yogurt for a lighter version
  • 1 tsp yellow mustard can substitute with Dijon or spicy mustard
  • ¼ tsp salt to taste
  • tsp black pepper freshly ground
  • ½ tsp paprika plus more for dusting
  • 1 dash orange food coloring optional, for color
  • 2 tbsp fresh chives finely chopped, for garnish

Instructions
 

  • Place eggs in a single layer in a saucepan and cover with cold water. Bring to a boil over high heat, then remove from heat and cover. Let sit for 10 minutes.
  • Prepare an ice bath. Transfer boiled eggs into the ice bath and cool completely for at least 5 minutes.
  • Peel the eggs gently under cool running water and slice them in half lengthwise. Remove yolks and place them in a mixing bowl.
  • Add mayonnaise, mustard, salt, pepper, paprika, and orange food coloring (if using) to the yolks. Mash until smooth and creamy.
  • Transfer the filling to a piping bag fitted with a star tip. Pipe the mixture into the egg white halves to form pumpkin shapes.
  • Use a toothpick or the dull side of a knife to create vertical lines resembling a pumpkin’s ridges. Insert a small piece of chive into the top as a stem.
  • Dust with additional paprika for color and garnish with chopped chives around the platter. Chill for 30 minutes before serving.

Notes

For extra flavor, add a pinch of garlic powder or a splash of hot sauce to the yolk mixture. You can make the eggs a day ahead — just fill and garnish them right before serving. Store in an airtight container in the fridge for up to 3 days.
