  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt

Wet Ingredients

  • ½ cup unsalted butter, softened Make sure it's softened for better mixing.
  • ½ cup brown sugar
  • ¼ cup honey
  • 1 cup goat cheese, softened Can be substituted with dairy-free cream cheese.
  • ¼ cup fresh thyme leaves Fresh or dried thyme can be used.
  • 1 cup fresh figs, chopped Dried figs or chopped dates can serve as substitutes.

Preparation

  • Gather all your ingredients to ensure a smooth baking experience.
  • Measure out the cornmeal, flour, baking powder, baking soda, and salt in one bowl.
  • In a separate bowl, have your butter, brown sugar, and honey ready to cream together.

Mixing Dry Ingredients

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix the dry ingredients together until well combined.

Creaming Wet Ingredients

  • In another bowl, cream the softened unsalted butter with the brown sugar and honey until light and fluffy.
  • This should take around 3-5 minutes using a hand mixer.

Combining Ingredients

  • Add in the softened goat cheese and beat until fully integrated.
  • Gradually mix in the dry ingredients until just combined.
  • Be careful not to overmix.
  • Fold in the thyme leaves and chopped figs gently.

Baking

  • Using a tablespoon, drop mounds of dough onto the prepared baking sheet.
  • Bake for 12-15 minutes until edges are crisp but centers are soft.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Serving

  • Once cooled, serve the cookies as they are or pair them with honey, fig jam, or cheese boards.
