Ingredients
  

Main Ingredients

  • 2 lbs chicken, cut into pieces You can also swap with pork or tofu.
  • ½ cup soy sauce Use tamari or coconut aminos for gluten-free.
  • ½ cup vinegar (cane or white vinegar) Apple cider vinegar is a milder alternative.
  • 1 large onion, sliced Shallots or green onions can be used for milder taste.
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 tsp black peppercorns
  • 1 tbsp oil
  • 1 cup water

Preparation

  • Marinate the chicken in soy sauce for about 30 minutes.
  • Heat oil in a pot over medium heat, add garlic and onion, and sauté for 3-4 minutes.
  • Add the marinated chicken to the pot and brown it on all sides for 5-7 minutes.
  • Pour in the vinegar and let it boil for about 3 minutes without stirring.
  • Add water, bay leaves, and black peppercorns, then let it simmer.
  • Cover and let simmer for about 30 minutes until chicken is tender.
  • Taste and adjust seasoning if necessary, then serve hot with rice.

Notes

Filipino Chicken Adobo is best served with steamed rice and can be stored in the refrigerator for up to four days or frozen for three months.
